Was good but my execution wasn't the best. | |||
Separated into crown, legs and back (for stock) which was fine. Used recipe from Adi Bono Italian Regional Cooking - wild duck as done in the valleys - for the crown which turned out to be slightly overdone. The sauce, for which I used more stock than wine, wasn't nice at all. Confit the legs but cooked too long so overdone. Helen made a kumquat chutney that worked really well as did my [[Caramelised Chicory]] | |||

- Pitta bread that actually puffed up and works. Remains edible after freezing. At last Pitta bread
Freezing pizza bases

- freezing the pizza bases from the recipe Pizza works really well. Let the balls of dough relax before freezing on a tray and then individually wrapping when frozen. This means that they don't stick together and they defrost quicker. Once defrosted, ball them up again and allow to rest for ½ hour or more.

- my first attempt at making ice cream wafers. Recipe from Ices - the definitive guide Caroline Liddell & Robin Weir. They were OK but not quite there. Needs a bit of salt and maybe vanilla or something. They also are very difficult to shape

- attempt 2. From https://www.seriouseats.com/waffle-cone-recipe. This was worse than attempt 1. Had a lot of ingredients and tasted like the kitchen sink had been thrown in. Batter was very thin and wafers tended to stick to the iron. Added some more flour and they tasted floury

Wild duck
Got a wild duck (wilde eend) from the poultry shop Jonker in de Pijp. Was good but my execution wasn't the best. Separated into crown, legs and back (for stock) which was fine. Used recipe from Adi Bono Italian Regional Cooking - wild duck as done in the valleys - for the crown which turned out to be slightly overdone. The sauce, for which I used more stock than wine, wasn't nice at all. Confit the legs but cooked too long so overdone. Helen made a kumquat chutney that worked really well as did my Caramelised Chicory
Next time I would confit legs and take the breasts off the duck and treat like farmed duck, e.g. James Martin
