these quantities are very approximate and suitable for 2 persons
Ingredients
- 1 sausage - I use gerookte varkensworst van de slager, butchers' smoked pork sausage
- 500g potatoes - suitable for mashing, i,e floury or kruimig/iets kruimig
- 100g curly kale
- salt
- gravy for serving
Method
- Peel the potatoes and place in saucepan with lid or casserole dish that can go on stove. Add sufficient water to partially cover potatoes - they dont want to under water or too dry - so about half to three-quarters covered. Add salt to taste. Cover the potatoes with the curly kale - washed and chopped finely if it wasn't bought preprepared. Put on heat and bring to boil - then turn down heat to low and cover with lid. Cook for 20-30 minutes till potatoes and kale are tender.
- Meanwhile cook the sausage per instructions - or if none, place in pan of cold water, and bring to a barely rippling simmer for 20-25 minutes.
- When the potatoes and kale are done, mash them together - in NL they have specially made aardappelstampers (potato stampers) designed for this purpose.
- Serve with the hot sausage and gravy
