these quantities are very approximate and suitable for 2 persons

Ingredients

1 sausage - I use gerookte varkensworst van de slager, butchers' smoked pork sausage
500g potatoes - suitable for mashing, i,e floury or kruimig/iets kruimig
100g curly kale
salt
gravy for serving

Method

  1. Peel the potatoes and place in saucepan with lid or casserole dish that can go on stove. Add sufficient water to partially cover potatoes - they dont want to under water or too dry - so about half to three-quarters covered. Add salt to taste. Cover the potatoes with the curly kale - washed and chopped finely if it wasn't bought preprepared. Put on heat and bring to boil - then turn down heat to low and cover with lid. Cook for 20-30 minutes till potatoes and kale are tender.
  2. Meanwhile cook the sausage per instructions - or if none, place in pan of cold water, and bring to a barely rippling simmer for 20-25 minutes.
  3. When the potatoes and kale are done, mash them together - in NL they have specially made aardappelstampers (potato stampers) designed for this purpose.
  4. Serve with the hot sausage and gravy
