Pitta bread that actually puffed up and works. Remains edible after freezing. At last Pitta bread

Freezing pizza bases

freezing the pizza bases from the recipe Pizza works really well. Let the balls of dough relax before freezing on a tray and then individually wrapping when frozen. This means that they don't stick together and they defrost quicker. Once defrosted, ball them up again and allow to rest for ½ hour or more.

my first attempt at making ice cream wafers. Recipe from Ices - the definitive guide Caroline Liddell & Robin Weir. They were OK but not quite there. Needs a bit of salt and maybe vanilla or something. They also are very difficult to shape

attempt 2. From https://www.seriouseats.com/waffle-cone-recipe. This was worse than attempt 1. Had a lot of ingredients and tasted like the kitchen sink had been thrown in. Batter was very thin and wafers tended to stick to the iron. Added some more flour and they tasted floury

my second attempt at first recipe (10-Aug-2021) ice cream wafers. Added some salt and a few drops of vanilla essence. Also used caster sugar instead of icing. Better - tasted good. Must try with brown sugar.
