⇐ Bread and baking

This is my attempt to make scrocchi, a type of cracker sold in Marqt. They do various flavours such as garlic and olive with bits of olive. Mine is plain with just olive oil and salt as flavouring. The basic recipe was adapted from one for water biscuits on BBC Good Food


Ingredients

200g plain flour
½ tsp baking powder
50g extra virgin olive oil
½ tsp sea salt + more for sprinkling on top
4 tbsp water, approx

Method

  1. Preheat oven to 180℃
  2. Line two baking sheets with greaseproof paper
  3. Place flour, baking powder, ½ tsp salt and olive oil in bowl of food processor. Give a whizz to fully amalgamate ingredients. Add nearly all the water and pulse till it comes together to form dough. Add more water a tsp at a time and pulse, till you have a soft but not sticky dough.
  4. Roll half the dough out on one of the prepared baking sheets as thinly as possible. Brush with water and sprinkle with sea salt. With a pastry cutter score the rolled out dough to form small crackers, approx 2x4cm.
  5. Bake for 10-15 minutes until they feel dry and sandy but are still pale. Transfer to a wire rack and allow to cool. Break into crackers along the score lines.
