Bhindi Bhaji

The okra has to young and fresh looking. If they are going hard, or have lots of black spots then don't bother. Look for pods that are small, 5-8 cm, and tender.
Ingredients
- 1 tbsp vegetable oil
- ½ tsp cumin seeds
- 1 small onion, finely chopped
- 2 cloves garlic, crushed
- 1 green chilli, finely chopped
- 200g fresh okra
- ¼ tsp turmeric
- ¼ tsp chilli powder
- ¼ tsp garam masala
- ½ tsp ground coriander
- 1 large tomato, peeled and chopped
- salt, to taste
Method
- Heat the oil in a pan and throw in the cumin seeds and allow to get a little darker and release aroma
- Add the onion, garlic and chilli and fry until softened and slightly browned
- Add the okra and stir fry until completely mixed
- Turn down heat if it is frying too hard and place a lid on pan and cook for a further 3 minutes
- Add the turmeric, chilli powder, garam masala, coriander and some salt and stir in to mix and get fragrant. Add the tomato and mix in.
- Put lid on again and allow to cook for another 3 minutes
- When the okra is tender, and the sauce has reduced and thickened till it is almost dry then dish is ready. Check seasoning.
