Bhindi Bhaji

The okra has to young and fresh looking. If they are going hard, or have lots of black spots then don't bother. Look for pods that are small, 5-8 cm, and tender.


Ingredients

1 tbsp vegetable oil
½ tsp cumin seeds
1 small onion, finely chopped
2 cloves garlic, crushed
1 green chilli, finely chopped
200g fresh okra
¼ tsp turmeric
¼ tsp chilli powder
¼ tsp garam masala
½ tsp ground coriander
1 large tomato, peeled and chopped
salt, to taste

Method

  1. Heat the oil in a pan and throw in the cumin seeds and allow to get a little darker and release aroma
  2. Add the onion, garlic and chilli and fry until softened and slightly browned
  3. Add the okra and stir fry until completely mixed
  4. Turn down heat if it is frying too hard and place a lid on pan and cook for a further 3 minutes
  5. Add the turmeric, chilli powder, garam masala, coriander and some salt and stir in to mix and get fragrant. Add the tomato and mix in.
  6. Put lid on again and allow to cook for another 3 minutes
  7. When the okra is tender, and the sauce has reduced and thickened till it is almost dry then dish is ready. Check seasoning.
