Ingredients

rice
1 measure wild rice (100g) - I use a wild rice mix, i.e ½ and ½ wild rice and basmati
4 measures water
½ tsp salt
dressing
½ tsp orange zest
2 Tbsp orange juice
1 Tbsp olive oil
1½ Tbsp cider vinegar
1 Tbsp honey
½ tsp dijon mustard
freshly ground black pepper
nuts & fruit
1 measure pecans, toasted and coarsely chopped
½ measure cranberries
½ measure flat leaf parsley, chopped
1 celery stalk, diced
¼ measure pumpkin seeds, toasted
1 spring onion, chopped
salt & pepper

Method

  1. In a medium pan, combine rice, water and salt. Bring to a boil and then turn down heat low and cook till rice is cooked, 30, 40 minutes or longer. Drain in a strainer and allow to cool.
  2. In a large bowl, mix the dressing ingredients and whisk together. Add the cooked rice and the fruit and nuts. Mix well and check seasoning.
