Wild Rice Salad with Cranberries & Pecans

Ingredients
- rice
- 1 measure wild rice (100g) - I use a wild rice mix, i.e ½ and ½ wild rice and basmati
- 4 measures water
- ½ tsp salt
- dressing
- ½ tsp orange zest
- 2 Tbsp orange juice
- 1 Tbsp olive oil
- 1½ Tbsp cider vinegar
- 1 Tbsp honey
- ½ tsp dijon mustard
- freshly ground black pepper
- nuts & fruit
- 1 measure pecans, toasted and coarsely chopped
- ½ measure cranberries
- ½ measure flat leaf parsley, chopped
- 1 celery stalk, diced
- ¼ measure pumpkin seeds, toasted
- 1 spring onion, chopped
- salt & pepper
Method
- In a medium pan, combine rice, water and salt. Bring to a boil and then turn down heat low and cook till rice is cooked, 30, 40 minutes or longer. Drain in a strainer and allow to cool.
- In a large bowl, mix the dressing ingredients and whisk together. Add the cooked rice and the fruit and nuts. Mix well and check seasoning.
