Ingredients

½ cauliflower
250ml milk
25g butter
100ml double cream
salt & (preferably white) pepper

Method

  1. Cut the cauliflower into small pieces. Place in a pan with the milk and butter, bring to the boil and simmer till the cauliflower is tender.
  2. Add the cream, bring to the boil again and then liquidise to a smooth puree. Season to taste.
