Cauliflower puree

Ingredients
- ½ cauliflower
- 250ml milk
- 25g butter
- 100ml double cream
- salt & (preferably white) pepper
Method
- Cut the cauliflower into small pieces. Place in a pan with the milk and butter, bring to the boil and simmer till the cauliflower is tender.
- Add the cream, bring to the boil again and then liquidise to a smooth puree. Season to taste.
