Need to roll out dough really thin else you don't get Ritz crackers but something more like butter puffs
Ingredients
- 400g flour
- 3 tsp baking powder
- 1 tbsp sugar
- ½tsp + ½tsp salt
- 120g cold unsalted butter
- 2 tbsp vegetable oil
- 160ml water
- 1 egg, beaten for egg wash
Method
- Heat oven to 210℃ and line baking sheets with parchment paper
- Put flour, baking powder, sugar and ½tsp of salt in the bowl of a food processor and pulse to mix
- Add the cold butter a little at a time and pulse to combine. With the processor running, add the vegetable oil slowly.
- Add the water a little at a time to make dough - a ball should start to form. Don't want it too sticky
- On a floured surface, split dough in two and roll out as thinly as possible. Take care it doesn't stick - flour the work surface if necessary
- Cut the dough out with a cookie cutter and place on baking sheets
- Use a fork to prick holes in the crackers
- Brush the crackers with egg wash and sprinkle on remaining salt
- Bake the crackers for 10 minutes or longer until nicely browned and done
