Quessadillas with beans

Ingredients
- 8 tortilla wraps
- 1 onion
- 1 tin red kidney beans
- ½ tin tomatoes
- Chilli to taste - fresh, chilli flakes, encona or whatever
- ½ tsp ground cumin
- ½ tsp ground coriander
- salt to taste
- 200g firm mozzarella or similar
Method
- Fry onions in a little oil, until just starting to colour
- Add drained beans and fry for a minute or two
- Add tomatoes, chilli, cumin, coriander and salt and simmer for a while. You don't want the mixture too wet.
- Off the heat, add the cheese and mix and correct seasoning
- Form parcels by placing dollop of mixture in centre of tortilla. Fold down top to just cover mixture but not as far as bottom of tortilla. Fold in both sides. Fold up bottom to seal. A bit like and envelope
- Grill the quesadillas on a griddle pan till warmed through and crispy and a bit coloured on the outside
