Moroccan lentil & chard soup

Ingredients
- 2 tablespoons olive oil
- 1 medium yellow onion diced
- 2 medium carrots diced
- 2 large cloves garlic minced
- 1 tsp ground cumin
- ½ tsp ground ginger
- ½ tsp ground turmeric
- ½ teaspoon red chili flakes
- 1 tsp sea salt
- 1 tin chopped tomatoes
- 150g split red or puy lentils
- 1l vegetable stock
- bunch rainbow chard - stems roughly chopped, leaves shredded
Method
- Soften onion and carrot in the olive oil in a large pot. After a few minutes add the chopped chard chard stems and cook till onions start to take a little colour.
- Add the spices and cook for a minute. Add the tin of tomatoes and cook and reduce a little.
- Add the stock, bring to a boil and add lentils
- Cook for 10-20 minutes or until lentils are done - puy lentils will take longer than red.
- Add the chard leaves and cook for 5 minutes at most. Check seasoning and serve
