Kumquat chutney

Ingredients

500g sliced & deseeded kumquats
250ml apple cider vinegar
65g cranberries
65g chopped dried apricots
2 carrots, shredded
minced chilli, to taste
100g sugar
2 Tbsp honey
2 tsp salt
¼ tsp each of ground cinnamon, ground coriander, ground cloves, ground ginger
½ tsp black crushed peppercorns

Method

  1. Add 500g of sliced deseeded kumquats to 250 ml apple vinegar. Add 65g dried cranberries and 65g chopped dried apricots and 2 shredded carrots. Bring to boil. Simmer for 5 mins.
  2. Add minced chilli, 100g sugar, 2 tbls honey, 2 tsp salt, 1/4 tsp of ground cinnamon, ground coriander, ground cloves, ground ginger and 1/2 tsp black crushed peppercorns.

Simmer for 45 mins

  1. Bottle in sterilised jars.
