Kumquat chutney
From Bradnor

Ingredients
- 500g sliced & deseeded kumquats
- 250ml apple cider vinegar
- 65g cranberries
- 65g chopped dried apricots
- 2 carrots, shredded
- minced chilli, to taste
- 100g sugar
- 2 Tbsp honey
- 2 tsp salt
- ¼ tsp each of ground cinnamon, ground coriander, ground cloves, ground ginger
- ½ tsp black crushed peppercorns
Method
- Add 500g of sliced deseeded kumquats to 250 ml apple vinegar. Add 65g dried cranberries and 65g chopped dried apricots and 2 shredded carrots. Bring to boil. Simmer for 5 mins.
- Add minced chilli, 100g sugar, 2 tbls honey, 2 tsp salt, 1/4 tsp of ground cinnamon, ground coriander, ground cloves, ground ginger and 1/2 tsp black crushed peppercorns.
Simmer for 45 mins
- Bottle in sterilised jars.
