This is a recipe to make 4 burgers. The exact quantities of the ingredients is not critical so adapt to mood and inclination.
Ingredients
- 2 400g cans of beans of different types, e.g. chickpeas, kidney beans, haricots, flageolets...
- 1 large onion, finely chopped
- 2 cloves garlic, finely chopped
- fresh green or red chillies to taste, chopped
- 1 tsp chilli flakes
- ½ tsp ground cumin
- 1 tsp ground coriander
- large handful panko breadcrumbs
- flour for dusting
- oil for frying
Method
- Fry onion, garlic and chilli in olive oil till soft.
- Drain the beans and put in a blender with some salt, pepper, the chilli flakes, cumin, coriander and breadcrumbs. Blitz to a coarse mess - you don't want a puree or whole beans.
- Add the fried onions and mix well. Divide into 4, form balls and then flatten them to burgers and dust witha little flour. Allow to sit in the fridge for at least an hour - or even overnight.
- To cook, shallow fry in oil for 3-5 minutes on each side.
- Serve in a bun with the usual burger accoutrements to taste - mayo, ketchup, jalapeños, shredded lettuce, shredded cabbage, cheese...
