Helen's Mushroom Marsala sauce

This is a recipe that can be for mushroom marsala or chicken marsala or whatever marsala you facy. The exact quantities of the ingredients is not critical so adapt to mood and inclination.
Ingredients
- About 250g of mushrooms
- 1 large onion, finely chopped
- 2 cloves garlic
- an inch of ginger
- 2 large tomatoes roughly chopped
- About 12 cashew nuts ground into a powder or maybe powdered almonds
- 1 tsp garam masala
- 1 tsp ground coriander
- salt
- 3/4 tsp chili powder
- oil for frying
- bay leaf (optional)
- small bit of cinnamon (optional)
- Few fengreek leaves or seeds (optional)
- 3 green cardomoms (optional)
- chopped coriander (optional)
- 2 tbsp cream (optional)
Method
- Put onions, tomatoes, ginger, garlic and cashew nuts into a blender and make a fine paste - as smooth as possible
- Heat oil and add cardomoms, cinnamon and bay leaf then pour in onion etc mix and cook covered until the mixture thickens. Stir often
- Add chili powder, coriander powder and garam masala and saute on a low heat
- Add sliced mushrooms and salt and saute for 2 or 3 minutes (should all be quite dry at this stage)
- pour in a little bit of water to make a thick gravy and cook until mushrooms are ready. Turn heat off
- Srinkle on fenugreek, cream and coriander if using
- Serve with Indian bread or basmati rice
