Gnocchi with prawns and chorizo

Ingredients

1 tbsp extra virgin olive oil
1 chorizo sausage, coarsely chopped
200g cherry tomatoes
500g Gnocchi
250g uncooked prawns, shelled and deveined
rocket leaves
lemon wedges

Method

  1. Make the Gnocchi or buy a packet
  2. Heat the olive oil in a large pan over medium-high heat. Add the chorizo and cook for 2 minutes till golden brown. Add the tomatoes and cook, stirring for 2 more minutes until tomatoes begin to collapse
  3. Add the prawns and cook for a few minutes until prawns are done.
  4. Meanwhile cook the gnocchi in a large pan of boiling water. Fresh ones are done when they float to the surface.
  5. Add gnocchi to the prawn mixture. Toss to combine. Garnish with rocket leaves and lemon wedges
