Gnocchi with prawns and chorizo

Ingredients
- 1 tbsp extra virgin olive oil
- 1 chorizo sausage, coarsely chopped
- 200g cherry tomatoes
- 500g Gnocchi
- 250g uncooked prawns, shelled and deveined
- rocket leaves
- lemon wedges
Method
- Make the Gnocchi or buy a packet
- Heat the olive oil in a large pan over medium-high heat. Add the chorizo and cook for 2 minutes till golden brown. Add the tomatoes and cook, stirring for 2 more minutes until tomatoes begin to collapse
- Add the prawns and cook for a few minutes until prawns are done.
- Meanwhile cook the gnocchi in a large pan of boiling water. Fresh ones are done when they float to the surface.
- Add gnocchi to the prawn mixture. Toss to combine. Garnish with rocket leaves and lemon wedges
