Fileja with Nduja

Ingredients

for 4 people
Fileja scaled up with 2 eggs
1 jar nduja sausage (90g) or equivalent fresh
1 shallot or small onion, finely chopped
1 tin polpa tomatoes
1 Tbsp olive oil

Method

  1. In a pan large enough to hold all the ingredients, fry the finely chopped onion in olive oil until soft and translucent, the add tomatoes.
  2. Meanwhile fry the nduja sausage util it falls apart. Add to the pan with the onion and tomatoes and cook for at least 10 minutes until thickening.
  3. Cook the pasta for 5 minutes or longer if still too al dente. Add pasta to sauce
