Ingredients

4 eggs
80g brown sugar
80g castor sugar (or, 160g brown sugar to make it not as sweet)
200ml oil (something like sunflower oil or a nut oil which doesn't have a strong flavour/has a complementary flavour, avoid olive oil)
280g carrot, grated
1 small golden apple, grated
250g white flour (plus a few spoons of whole wheat flour for flavour if you have it)
16g baking powder
2 teaspoons cinnamon
orange zest, approx half an orange
pinch of salt
80g chopped walnuts


Method

  1. Whisk together the egg and sugar, then add the oil while continuing to whisk.
  2. Sieve in the flour, baking powder, and cinnamon to the egg, oil, and sugar mix, then add the orange zest and mix together.
  3. Mix in well the grated carrot and apple, salt, and walnuts. Put the mixture into a cake tin.
  4. Bake at 180 degrees for the first 15 mins, if already getting brown lower to 160 degrees for the last 15 mins or when a skewer comes out clean when tested in the middle.
