Ingredients
- 4 eggs
- 80g brown sugar
- 80g castor sugar (or, 160g brown sugar to make it not as sweet)
- 200ml oil (something like sunflower oil or a nut oil which doesn't have a strong flavour/has a complementary flavour, avoid olive oil)
- 280g carrot, grated
- 1 small golden apple, grated
- 250g white flour (plus a few spoons of whole wheat flour for flavour if you have it)
- 16g baking powder
- 2 teaspoons cinnamon
- orange zest, approx half an orange
- pinch of salt
- 80g chopped walnuts
Method
- Whisk together the egg and sugar, then add the oil while continuing to whisk.
- Sieve in the flour, baking powder, and cinnamon to the egg, oil, and sugar mix, then add the orange zest and mix together.
- Mix in well the grated carrot and apple, salt, and walnuts. Put the mixture into a cake tin.
- Bake at 180 degrees for the first 15 mins, if already getting brown lower to 160 degrees for the last 15 mins or when a skewer comes out clean when tested in the middle.
