Caesar salad with pan fried duck breast
Ingredients
- 2 cloves garlic
- 150ml olive oil
- 4 slices day-old sourdough bread
- 2 cos lettuce
- 2 anchovy fillet
- 1 egg yolk
- juice of ½ lemon
- grated or shoved parmesan
Method
- Crush the garlic and add to the oil. Allow to infuse for at least and hour. Preheat oven to 200℃. Cut the bread into rough cubes, toss in a little oil and bake in oven for 15 minutes
- Mash the anchovies against side of salad bowl, until you have a paste and add the egg yolk. Slowly beat in the remaining garlic infused oil to make a thickish dressing. Stir in lemon juice and adjust seasoning.
- Put the leaves in the bowl and toss to dress. Add the parmesan and croutons.
