Bruine bonensoep

Ingredients

500g bruine bonen (dried red haricots)
200g stewing beef preferably with bone and marrow
1 celery stick chopped
1 carrot chopped
1 onion chopped
500ml beef stock (or just water)
olive oil

Method

  1. Soak beans overnight in cold water
  2. Next day, drain beans and cover with fresh water. Bring to boil and simmer for 1 hour.
  3. After the hour, in a separate pan sweat the onion, carrot and celery in olive oil for 5 minutes without browning.
  4. Add the beef and brown a little
  5. Add beans and the cooking water. Add the stock and season. Simmer for an hour or until the beans are soft
  6. Mash up the beans somewhat but leave some texture. Adjust seasoning
