Bruine bonensoep

Ingredients
- 500g bruine bonen (dried red haricots)
- 200g stewing beef preferably with bone and marrow
- 1 celery stick chopped
- 1 carrot chopped
- 1 onion chopped
- 500ml beef stock (or just water)
- olive oil
Method
- Soak beans overnight in cold water
- Next day, drain beans and cover with fresh water. Bring to boil and simmer for 1 hour.
- After the hour, in a separate pan sweat the onion, carrot and celery in olive oil for 5 minutes without browning.
- Add the beef and brown a little
- Add beans and the cooking water. Add the stock and season. Simmer for an hour or until the beans are soft
- Mash up the beans somewhat but leave some texture. Adjust seasoning
