Mushrooms à la greque

Ingredients
- 2 Tbsp olive oil
- 1 medium onion, finely chopped
- 1 medium carrot, peeled and diced
- 1 clove garlic, peeled and bruised
- 1 bay leaf
- Salt & pepper
- 225g small button mushrooms
- small glass dry white wine
- garnish
- chopped parsley
- tomato peeled and sliced
Method
- Heat the oil in a pan and gently fry the onions, carrot and garlic till soft but not browned
- Add the bay leaf, wine and season with salt and pepper. Simmer for a minute or longer till the wine has almost all evaporated
- Add the mushrooms and cook gently, covered, for 5 minutes, shaking the pan regularly.
- Remove bay leaf and garlic clove. Check seasoning and allow to cool, then chill
- Garnish with the tomato and parsley
