Ingredients

2 Tbsp olive oil
1 medium onion, finely chopped
1 medium carrot, peeled and diced
1 clove garlic, peeled and bruised
1 bay leaf
Salt & pepper
225g small button mushrooms
small glass dry white wine
garnish
chopped parsley
tomato peeled and sliced

Method

  1. Heat the oil in a pan and gently fry the onions, carrot and garlic till soft but not browned
  2. Add the bay leaf, wine and season with salt and pepper. Simmer for a minute or longer till the wine has almost all evaporated
  3. Add the mushrooms and cook gently, covered, for 5 minutes, shaking the pan regularly.
  4. Remove bay leaf and garlic clove. Check seasoning and allow to cool, then chill
  5. Garnish with the tomato and parsley
