Ingredients

2 tablespoons olive oil
1 medium yellow onion diced
2 medium carrots diced
2 large cloves garlic minced
1 tsp ground cumin
½ tsp ground ginger
½ tsp ground turmeric
½ teaspoon red chili flakes
1 tsp sea salt
1 tin chopped tomatoes
150g split red or puy lentils
1l vegetable stock
bunch rainbow chard - stems roughly chopped, leaves shredded

Method

  1. Soften onion and carrot in the olive oil in a large pot. After a few minutes add the chopped chard chard stems and cook till onions start to take a little colour.
  2. Add the spices and cook for a minute. Add the tin of tomatoes and cook and reduce a little.
  3. Add the stock, bring to a boil and add lentils
  4. Cook for 10-20 minutes or until lentils are done - puy lentils will take longer than red.
  5. Add the chard leaves and cook for 5 minutes at most. Check seasoning and serve
