Gado Gado
Gado Gado is an Indonesian dish with a spicy peanut sauce. The sate-like sauce goes over an (artful?) arrangement of raw and cooked vegetables. Can also add hard boiled eggs or tofu for protein and serve the whole lot on a bed of baby spinach or other salad leaves.
Ingredients
- Sauce
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 2 tsp grated ginger
- ½ jar good quality peanut butter, my preference is for the crunchy variety
- 1 Tbs honey
- ½ tsp cayenne pepper, or more to taste
- juice of a lemon
- a bay leaf
- 1 Tbs cider vinegar
- 300ml water (or more)
- 1 tsp salt
- dash tamari
- 2 Tbs butter or oil
- under the sauce
- steamed or raw
- shredded cabbage
- sliced carrot
- sliced celery
- steamed
- broccoli
- fresh whole green beans
- raw
- bean sprouts
- protein
- hard-boiled eggs
- tofu chunks, raw or sautéed in oil with sesame seeds
- garnish
- drizzle of sesame oil
- sliced apple, lemon and /or orange
- raisins
- toasted seeds and nuts
Method
- Sauce the onions, garlic, ginger and bay leaf in the butter, until onions are translucent
- Add the peanut butter and fry briefly
- Add the water and other ingredients and mix thoroughly
- Bring to boil and simmer on the lowest possible heat for 30 minutes. Add more water if too thick
