Banana pancakes

Ingredients
- 175g self-raising flour
- 1 teaspoon baking powder
- 1 ripe banana
- 1 medium egg
- 125ml whole milk
- butter for frying
Method
- Simply, mix dry and wet ingredients then combine.
- Measure and sieve flour into a large bowl. Add the spoon of baking powder and mix with flour.
- Peel bananas and mash in another bowl until somewhat smooth. It will be a bit lumpy no matter how much you mash it, but it adds to the texture in the end.
- Add the egg and milk to the banana, mix until smooth.
- Make a well in the flour and add the banana, milk and egg mix in the middle. Mix well. It will be quite thick, you can add a glug of milk to help make sure everything is well combined. Needs to have a thick consistency like a thick cupcake batter.
- Put a frying pan on medium heat, melt a small bit of butter.
- Add a small ladle/big spoonful of batter in the middle of the pan. It will spread only to the size of mug/tea saucer.
- Cook until bubbles begin to appear. Flip using a spatula, the batter on top will still be very wet, in comparison to crepes.
- Fry on both sides until golden brown and centre is cooked.
- Serve with syrup, lemon and sugar, fruit, or more banana.
