Melon and fennel salad

Ingredients

for the salad
½ courgette
1 red onion
½ build fennel
2 tomatoes
½ cantaloupe melon
for the dresssing
juice from ½ lemon
1 tsp sugar
1 tsp mustard
1 Tbsp wine vinegar
2 Tbsp olive oil
salt & pepper
garnish
basil
parsley

Method

  1. Using a mandoline, or otherwise, finely slice the courgette. Put courgettes in bowl and sprinkle with salt. Allow to stand for 5 minutes.
  2. Squeeze out the courgette to remove water and some of the salt. Finely slice the fennel and onion and add to bowl. Cut the melon and tomatoes into chunks and add to bowl. Mix well.
  3. Mix all the elements of the dressing and check seasoning, being careful with the salt as the courgettes will be salty. Mix into salad and garnish with basil and parsley leaves
