Herby Waffles with Seafood

Ingredients

plenty for 2 persons
for the cucumber mouse
1 cucumber
100ml whipping cream
1 leaf gelatine - I use Dr Oetker which is about 11x7cm
for the waffles
100ml milk
6g yeast - or 3g dried yeast
50g unsalted butter
70ml sparkling water
2 eggs, lightly beaten
100g plain flour
½ tsp salt or to taste
small bunch chives
small bunch dill
for the salad
various seafood according to taste and availability, e.g. hollandaise garnalen (grey shrimps), smoked salmon, smoked halibut, paling, etc
garnishes, such as sliced radish, cherry tomatoes, some of the chives and dill, etc
olive oil for drizzling

Method

  1. Prepare the cucumber.Peel and deseed the cucumber. Puree the cucumber in a food processor. Tip the puree into a sieve over a bowl - you'll need some of the juice later.
  2. Make the cucumber mousse. Place the leaf of gelatine in cold water to soften. Whip the cream till stiffened (¾ stiff). Weigh off 100g of the cucumber puree into a bowl. Warm 1-2 Tbsp of the cucumber juice. Squeeze some of the water out of the leaf of gelatine and dissolve it in the warmed juice. Mix the weighed cucumber puree, gelatine juice and whipped cream together. Allow to stiffen for at least 2 hours in the fridge.
  3. Make the waffle batter. Warm half the milk and dissolve the butter in it. Check it's not too hot and add the yeast. Save some of the chives and dill for garnish and chop the rest finely. Put the sparkling water in a bowl large enough for all of the batter ingredients. Add the rest of the milk and the eggs and beat with whisk while adding the flour to make a batter. Add the milk butter yeast mixture and add salt, pepper, chives and dill to taste. Allow to rest at room temperature for 30 minutes or so.
  4. Make the waffles. Heat the waffle iron. When hot make the waffles. On my waffle iron (Breville) this takes 70ml of batter for each of the two plates and cooks for about 12 minutes.
  5. Plate up. Spoon a quenelle of cucumber mousse on a plate. Add the cold seafood and garnishes as you like and serve with the waffles. Drizzle some good quality olive oil over the salad.
