Ingredients

for the base (or use tortilla wraps)
250g strong bread flour
1 tsp sugar
3½g/7g dried/fresh yeast
75ml milk
75ml water
for the topping
150g minced lamb or beef
1 Tbsp tomato puree
1 peeled tomato
1 Tbsp paprika
1 small red onion
small handful mint
small handful parsley
1 fresh red chilli
50ml water
for the garnish
iceberg lettuce, sliced thinly
white cabbage, sliced thinly
tomato, sliced thinly
red onion, sliced thinly
garlic sauce
chilli sauce

Method

  1. Make the base. Mix the base ingredients and knead until smooth - 5 minutes. Leave to rise, covered, for an hour or so. Then divide and roll out as thin wraps.
  2. Make the topping. Put the mince in the bowl of a food processor and add the tomato puree, peeled tomato and paprika. Chop the onion and add to bowl. Roughly chop the herbs and add. Blitz briefly. Add the water and blitz again. Don't process too long or you'll 'cook' the mince.
  3. Cook. Heat the oven to 300℃ (or as hot as it will go). Cook for 4-5 minutes. Remove from oven, add garnishes and sauces of choice, roll up and eat
