Need to roll out dough really thin else you don't get Ritz crackers but something more like butter puffs


Ingredients

400g flour
3 tsp baking powder
1 tbsp sugar
½tsp + ½tsp salt
120g cold unsalted butter
2 tbsp vegetable oil
160ml water
1 egg, beaten for egg wash

Method

  1. Heat oven to 210℃ and line baking sheets with parchment paper
  2. Put flour, baking powder, sugar and ½tsp of salt in the bowl of a food processor and pulse to mix
  3. Add the cold butter a little at a time and pulse to combine. With the processor running, add the vegetable oil slowly.
  4. Add the water a little at a time to make dough - a ball should start to form. Don't want it too sticky
  5. On a floured surface, split dough in two and roll out as thinly as possible. Take care it doesn't stick - flour the work surface if necessary
  6. Cut the dough out with a cookie cutter and place on baking sheets
  7. Use a fork to prick holes in the crackers
  8. Brush the crackers with egg wash and sprinkle on remaining salt
  9. Bake the crackers for 10 minutes or longer until nicely browned and done
