Pickled Onions

Ingredients
- the onions
- 1kg small pickling oniions
- for the brine
- 100g salt
- 1l water
- for the vinegar
- 500ml vinegar
- whole spices, including
- peppercorns
- dried red chillies
- and maybe
- ginger
- bay leaves
- mace
- allspice
- cinnamon
Method
- Make the brine by dissolving the salt in water
- Peel the onions and soak in the brine overnight
- Put the vinegar in a saucepan and add your chosen spices. Bring to the boil, pour into a bowl and allow to cool for at least 2 hours.
- Remove onions from brine, rinse and drain. pack into sterilised jars. Pour the vinegar over and seal
