Mango Pico-de-Gallo Salad

This is great will all sorts of things - really fresh and punchy. I often just slice the onions finely which gives a coarser texture


Ingredients

2 ripe mango - peeled and cut into 5mm dice
1 tomato - peeled, deseeded and cut into 5mm dice
½ red onion - peeled and chopped to 5mm dice
1 clove garlic - minced
2 jalapeño chillies - deseeded and finely chopped
1 tbsp fresh coriander leaves - finely chopped
pinch of chilli powder or cayenne pepper
3 tbsp lime juice
Salt & freshly ground black pepper

Method

  1. Combine all the ingredients except lime juice and mix well.
  2. Stir in lime juice and adjust seasoning
