⇐ The Green Book

The original recipe is for a huge amount, but apparently it freezes well. I did 300g which was more than enough for the two of us (small appetites)

Serve with Salad, Pitta bread, Kebab shop yoghurt and red salsa sauces.


Ingredients

1 onion, grated or blended
500g minced beef or lamb 80/20% meat to fat ratio
1 Tbsp Greek yoghurt
½ tsp salt
½ tsp ground black pepper
1 tsp paprika or chilli powder
1 tsp fresh thyme
1 tsp dried oregano

Method

  1. Put the grated onion in a muslin bag and squeeze out the juice - its only the juice you need for this recipe so keep the onions for someone else.
  2. Add the meat and other ingredients to the onion juice and blend in a processor till pretty smooth.
  3. Form into a meat loaf and bake on a tray covered with foil in oven (180℃) for about an hour or until done.
  4. Remove from oven and allow to cool. Save the meat juices and chill the meat loaf for a couple of hours or overnight.
  5. To serve, slice the meat loaf thinly. Heat a Tbsp or so of oil in a frying pan and add the sliced meat in batches, keep cooked batches warm, moistened with the reserved, warmed meat juices.
