Caesar salad with pan fried duck breast


Ingredients

2 cloves garlic
150ml olive oil
4 slices day-old sourdough bread
2 cos lettuce
2 anchovy fillet
1 egg yolk
juice of ½ lemon
grated or shoved parmesan

Method

  1. Crush the garlic and add to the oil. Allow to infuse for at least and hour. Preheat oven to 200℃. Cut the bread into rough cubes, toss in a little oil and bake in oven for 15 minutes
  2. Mash the anchovies against side of salad bowl, until you have a paste and add the egg yolk. Slowly beat in the remaining garlic infused oil to make a thickish dressing. Stir in lemon juice and adjust seasoning.
  3. Put the leaves in the bowl and toss to dress. Add the parmesan and croutons.
