Ingredients

175g self-raising flour
1 teaspoon baking powder
1 ripe banana
1 medium egg
125ml whole milk
butter for frying


Method

  1. Simply, mix dry and wet ingredients then combine.
  2. Measure and sieve flour into a large bowl. Add the spoon of baking powder and mix with flour.
  3. Peel bananas and mash in another bowl until somewhat smooth. It will be a bit lumpy no matter how much you mash it, but it adds to the texture in the end.
  4. Add the egg and milk to the banana, mix until smooth.
  5. Make a well in the flour and add the banana, milk and egg mix in the middle. Mix well. It will be quite thick, you can add a glug of milk to help make sure everything is well combined. Needs to have a thick consistency like a thick cupcake batter.
  6. Put a frying pan on medium heat, melt a small bit of butter.
  7. Add a small ladle/big spoonful of batter in the middle of the pan. It will spread only to the size of mug/tea saucer.
  8. Cook until bubbles begin to appear. Flip using a spatula, the batter on top will still be very wet, in comparison to crepes.
  9. Fry on both sides until golden brown and centre is cooked.
  10. Serve with syrup, lemon and sugar, fruit, or more banana.
