Ingredients

the onions
1kg small pickling oniions
for the brine
100g salt
1l water
for the vinegar
500ml vinegar
whole spices, including
peppercorns
dried red chillies
and maybe
ginger
bay leaves
mace
allspice
cinnamon

Method

  1. Make the brine by dissolving the salt in water
  2. Peel the onions and soak in the brine overnight
  3. Put the vinegar in a saucepan and add your chosen spices. Bring to the boil, pour into a bowl and allow to cool for at least 2 hours.
  4. Remove onions from brine, rinse and drain. pack into sterilised jars. Pour the vinegar over and seal
