Ingredients

500g Desiré or Maris Piper potatoes. I used a variety called Pasta in NL
25g butter
1-2 egg yolks
Sat & pepper

Method

  1. Bake the potatoes in an oven at 180℃. Ideally till internal temperature is 98-99℃ - or until soft when pierced with a knife
  2. When cool enough to handle, cut in half and scoop out the fluffy inside with a spoon - discard skins. Pass the flesh through a sieve, mould or ricer into a bowl. Add the butter, egg yolks and some seasoning. Mix thoroughly ancd check seasoning.
  3. Pipe into domes, nests or whatever and bake at 190℃ until appetisingly browned.
