#Using a mandoline, or otherwise, finely slice the courgette. Put courgettes in bowl and sprinkle with salt. Allow to stand for 5 minutes. | |||
#Squeeze out the courgette to remove water and some of the salt. Finely slice the fennel and onion and add to bowl. Cut the melon and tomatoes into chunks and add to bowl. Mix well. | |||
