This is my attempt to make scrocchi, a type of cracker sold in Marqt.  They do various flavours such as garlic and olive with bits of olive.&lt;br /&gt;
Mine is plain with just olive oil and salt as flavouring.&lt;br /&gt;
The basic recipe was adapted from one for water biscuits on BBC Good Food&lt;br /&gt;
&lt;br /&gt;
&amp;lt;br clear=all&amp;gt;&lt;br /&gt;
==Ingredients==&lt;br /&gt;
:200g plain flour&lt;br /&gt;
:½ tsp baking powder&lt;br /&gt;
:50g extra virgin olive oil&lt;br /&gt;
:½ tsp sea salt + more for sprinkling on top&lt;br /&gt;
:4 tbsp water, approx&lt;br /&gt;
&lt;br /&gt;
==Method==&lt;br /&gt;
#Preheat oven to 180℃&lt;br /&gt;
#Line two baking sheets with greaseproof paper&lt;br /&gt;
#Place flour, baking powder, ½ tsp salt and olive oil in bowl of food processor. Give a whizz to fully amalgamate ingredients. Add nearly all the water and pulse till it comes together  to form dough. Add more water a tsp at a time and pulse, till you have a soft but not sticky dough.&lt;br /&gt;
#Roll half the dough out on one of the prepared baking sheets as thinly as possible. Brush with water and sprinkle with sea salt. With a pastry cutter score the rolled out dough to form small crackers, approx 2x4cm.&lt;br /&gt;
#Bake for 10-15 minutes until they feel dry and sandy but are still pale. Transfer to a wire rack and allow to cool.  Break into crackers along the score lines.   &lt;br /&gt;
