Need to roll out dough really thin else you don&amp;#039;t get Ritz crackers but something more like butter puffs&lt;br /&gt;

==Ingredients==&lt;br /&gt;
:400g flour&lt;br /&gt;
:3 tsp baking powder&lt;br /&gt;
:1 tbsp sugar&lt;br /&gt;
:½tsp + ½tsp salt&lt;br /&gt;
:120g cold unsalted butter&lt;br /&gt;
:2 tbsp vegetable oil&lt;br /&gt;
:160ml water&lt;br /&gt;
:1 egg, beaten for egg wash&lt;br /&gt;
&lt;br /&gt;
==Method==&lt;br /&gt;
#Heat oven to 210℃ and line baking sheets with parchment paper&lt;br /&gt;
#Put flour, baking powder, sugar and ½tsp of salt in the bowl of a food processor and pulse to mix&lt;br /&gt;
#Add the cold butter a little at a time and pulse to combine.  With the processor running, add the vegetable oil slowly.&lt;br /&gt;
#Add the water a little at a time to make dough -  a ball should start to form.  Don&amp;#039;t want it too sticky&lt;br /&gt;
#On a floured surface, split dough in two and roll out as thinly as possible.  Take care it doesn&amp;#039;t stick - flour the work surface if necessary&lt;br /&gt;
#Cut the dough out with a cookie cutter and place on baking sheets &lt;br /&gt;
#Use a fork to prick holes in the crackers &lt;br /&gt;
#Brush the crackers with egg wash and sprinkle on remaining salt&lt;br /&gt;
#Bake the crackers for 10 minutes or longer until nicely browned and done&lt;br /&gt;
