:1kg small pickling oniions&lt;br /&gt;
;for the brine&lt;br /&gt;
:100g salt&lt;br /&gt;
:1l water&lt;br /&gt;
;for the vinegar&lt;br /&gt;
:500ml vinegar&lt;br /&gt;
:whole spices, including&lt;br /&gt;
::peppercorns&lt;br /&gt;
::dried red chillies&lt;br /&gt;
:and maybe&lt;br /&gt;
::ginger&lt;br /&gt;
::bay leaves&lt;br /&gt;
::mace&lt;br /&gt;
::allspice&lt;br /&gt;
:cinnamon&lt;br /&gt;

==Method==&lt;br /&gt;
#Make the brine by dissolving the salt in water&lt;br /&gt;
#Peel the onions and soak in the brine overnight&lt;br /&gt;
#Put the vinegar in a saucepan and add your chosen spices. Bring to the boil, pour into a bowl and allow to cool for at least 2 hours.&lt;br /&gt;
#Remove onions from brine, rinse and drain.  pack into sterilised jars.  Pour the vinegar over and seal&lt;br /&gt;
