==Method==&lt;br /&gt;
#Heat the oil in a pan and gently fry the onions, carrot and garlic till soft but not browned&lt;br /&gt;
#Add the bay leaf, wine and season with salt and pepper.  Simmer for a minute or longer till the wine has almost all evaporated &lt;br /&gt;
#Add the mushrooms and cook gently, covered, for 5 minutes, shaking the pan regularly.&lt;br /&gt;
#Remove bay leaf and garlic clove.  Check seasoning and allow to cool, then chill&lt;br /&gt;
#Garnish with the tomato and parsley&lt;br /&gt;
