:2 tablespoons olive oil&lt;br /&gt;
:1 medium yellow onion diced&lt;br /&gt;
:2 medium carrots diced&lt;br /&gt;
:2 large cloves garlic minced&lt;br /&gt;
:1 tsp ground cumin&lt;br /&gt;
:½ tsp ground ginger&lt;br /&gt;
:½ tsp ground turmeric&lt;br /&gt;
:½ teaspoon red chili flakes&lt;br /&gt;
:1 tsp sea salt&lt;br /&gt;
:1 tin chopped tomatoes&lt;br /&gt;
:150g split red or puy lentils&lt;br /&gt;
:1l vegetable stock&lt;br /&gt;
:bunch rainbow chard  - stems roughly chopped, leaves shredded&lt;br /&gt;
&lt;br /&gt;
==Method==&lt;br /&gt;
#Soften onion and carrot in the olive oil in a large pot.  After a few minutes add the chopped chard chard stems and cook till onions start to take a little colour.&lt;br /&gt;
#Add the spices and cook for a minute.  Add the tin of tomatoes and cook and reduce a little.&lt;br /&gt;
#Add the stock, bring to a boil and add lentils&lt;br /&gt;
#Cook for 10-20 minutes or until lentils are done - puy lentils will take longer than red.&lt;br /&gt;
#Add the chard leaves and cook for 5 minutes at most. Check seasoning and serve&lt;br /&gt;
