:2 Tbsp finely chopped or grated onion (save tsp for garnish)&lt;br /&gt;
:Serrano chillies to taste, finely chopped&lt;br /&gt;
:3 heaped Tbsp chopped coriander (save some for garnish)&lt;br /&gt;
:salt to taste&lt;br /&gt;
:2 large avocados&lt;br /&gt;
:1 tomato (not too large), peeled seeded and chopped (save some for garnish)&lt;br /&gt;

==Method==&lt;br /&gt;
#Grind the onion, chillies, coriander and salt to a paste in blender or pestle and mortar - save some of the onion and coriander for garnish&lt;br /&gt;
#Peel and pit the avocados and mash them up with the chilli paste, but don&amp;#039;t lose the texture - it should be lumpy not smooth.&lt;br /&gt;
#Stir in the chopped tomato - saving some for garnish.&lt;br /&gt;
#Garnish with the saved onion, tomato and coriander&lt;br /&gt;
