Caesar salad with pan fried duck breast&lt;br /&gt;

==Ingredients==&lt;br /&gt;
:2 cloves garlic&lt;br /&gt;
:150ml olive oil&lt;br /&gt;
:4 slices day-old sourdough bread&lt;br /&gt;
:2 cos lettuce&lt;br /&gt;
:2 anchovy fillet&lt;br /&gt;
:1 egg yolk&lt;br /&gt;
:juice of ½ lemon&lt;br /&gt;
:grated or shoved parmesan&lt;br /&gt;
&lt;br /&gt;
==Method==&lt;br /&gt;
#Crush the garlic and add to the oil. Allow to infuse for at least and hour. Preheat oven to 200℃. Cut the bread into rough cubes, toss in a little oil and bake in oven for 15 minutes&lt;br /&gt;
#Mash the anchovies against side of salad bowl, until you have a paste and add the egg yolk. Slowly beat in the remaining garlic infused  oil to make a thickish dressing.  Stir in lemon juice and adjust seasoning.&lt;br /&gt;
#Put the leaves in the bowl and toss to dress.  Add the parmesan and croutons.&lt;br /&gt;
