The okra has to young and fresh looking.  If they are going hard, or have lots of black spots then don&amp;#039;t bother. Look for pods that are small, 5-8 cm, and tender.&lt;br /&gt;

==Ingredients==&lt;br /&gt;
:1 tbsp vegetable oil&lt;br /&gt;
:½ tsp cumin seeds&lt;br /&gt;
:1 small onion, finely chopped&lt;br /&gt;
:2 cloves garlic, crushed&lt;br /&gt;
:1 green chilli, finely chopped&lt;br /&gt;
:200g fresh okra&lt;br /&gt;
:¼ tsp turmeric&lt;br /&gt;
:¼ tsp chilli powder&lt;br /&gt;
:¼ tsp garam masala&lt;br /&gt;
:½ tsp ground coriander&lt;br /&gt;
:1 large tomato, peeled and chopped&lt;br /&gt;
:salt, to taste&lt;br /&gt;
&lt;br /&gt;
==Method==&lt;br /&gt;
#Heat the oil in a pan and throw in the cumin seeds and allow to get a little darker and release aroma&lt;br /&gt;
#Add the onion, garlic and chilli and fry until softened and slightly browned&lt;br /&gt;
#Add the okra and stir fry until completely mixed&lt;br /&gt;
#Turn down heat if it is frying too hard and place a lid on pan and cook for a further 3 minutes&lt;br /&gt;
#Add the turmeric, chilli powder, garam masala, coriander and some salt and stir in to mix and get fragrant.  Add the tomato and mix in.&lt;br /&gt;
#Put lid on again and allow to cook for another 3 minutes&lt;br /&gt;
#When the okra is tender, and the sauce has reduced and thickened till it is almost dry then dish is ready. Check seasoning.&lt;br /&gt;
