:2-5kg raw york ham which has been pickled in brine&lt;br /&gt;
&lt;br /&gt;
Total cooking time: Allow 20 minutes per 500g &lt;br /&gt;
&lt;br /&gt;
==Method==&lt;br /&gt;
#Soak overnight in cold water&lt;br /&gt;
#Change water and bring to the boil. Simmer for 30 minutes, skimming off scum&lt;br /&gt;
#Discard and renew water. Bring to boil and simmer for approx ⅔ of cooking time&lt;br /&gt;
#Remove skin (if butcher has not already done so)&lt;br /&gt;
#Score fat and stud with cloves. Glaze with a honey:vinegar mixture (1:1 to 1:2) and brown sugar&lt;br /&gt;
#Bake at 180℃ until internal temperature reached ±70℃ (at least 65℃ to be food safe)&lt;/div&gt;</summary>
