==Ingredients==
:500g Desiré or Maris Piper potatoes. I used a variety called Pasta in NL
:25g butter
:1-2 egg yolks
:Sat & pepper

==Method==
#Bake the potatoes in an oven at 180℃. Ideally till internal temperature is 98-99℃ - or until soft when pierced with a knife
#When cool enough to handle, cut in half and scoop out the fluffy inside with a spoon - discard skins.  Pass the flesh through a sieve, mould or ricer into a bowl.  Add the butter, egg yolks and some seasoning.  Mix thoroughly ancd check seasoning.
#Pipe into domes, nests or whatever and bake at 190℃ until appetisingly browned.
