This is great will all sorts of things - really fresh and punchy.  I often just slice the onions finely which gives a coarser texture

==Ingredients==
:2 ripe mango - peeled and cut into 5mm dice
:1 tomato - peeled, deseeded and cut into 5mm dice
:½ red onion - peeled and chopped to 5mm dice
:1 clove garlic - minced
:2 jalapeño chillies - deseeded and finely chopped
:1 tbsp fresh coriander leaves - finely chopped
:pinch of chilli powder or cayenne pepper
:3 tbsp lime juice
:Salt & freshly ground black pepper

==Method==
#Combine all the ingredients except lime juice and mix well.
#Stir in lime juice and adjust seasoning
