This my version of Waldorf Salad - a classic from Fawlty Towers - 'I think we're just out of Waldorfs'.
With raisins rather than grapes the ingredients are almost always in (my) house. The cheese is not traditional I but I like it.
The celery and apple want to be in equal proportions, you want more walnuts than raisins - in fact I'm quite stingy on the raisins, and the cheese needs to be diced small - 3-4mm cubes. Hellman's mayonnaise is fine.
Ingredients
- one or two sticks of celery
- one apple - I like Cox's or Braeburn
- walnuts, coarsely chopped
- raisins
- Gruyere cheese cut into tiny cubes
- mayonnaise
- salt and pepper
Method
- Clean and cut the celery in slices, i.e. U-shapes. Cut the apples into quarters, slice off core, cut each quarter lengthways and the cut those across to form chunks. Coarsely chop the walnuts. Cut the cheese into small cubes, 3-4mm. Put celery, apples, walnuts, raisins and cheese in a bowl.
- Season well with pepper and a little salt. Add mayonnaise to dress the salad but not too much. Done.
