Sri Lankan Daikon, mint, carrot and kohlrabi sambol

Ingredients

4-8 shallots depending on size or a medium red onion
8 fresh curry leaves
handful of fresh mint leaves
10cm piece from a large daikon (mooli or chinese radish)
½ a kohlrabi
1 carrot
2 limes
½ tsp salt or to taste

Method

  1. Peel and slice the shallots. Shred the curry leaves and mint. Peel and cut the daikon, carrot and kohlrabi into julienne using a knife or a mandolin. Zest and juice the limes.
  2. Mix all the vegetables and herbs together, season with salt and be generous with lime zest and juice
