Sri Lankan Daikon, mint, carrot and kohlrabi sambol

Ingredients
- 4-8 shallots depending on size or a medium red onion
- 8 fresh curry leaves
- handful of fresh mint leaves
- 10cm piece from a large daikon (mooli or chinese radish)
- ½ a kohlrabi
- 1 carrot
- 2 limes
- ½ tsp salt or to taste
Method
- Peel and slice the shallots. Shred the curry leaves and mint. Peel and cut the daikon, carrot and kohlrabi into julienne using a knife or a mandolin. Zest and juice the limes.
- Mix all the vegetables and herbs together, season with salt and be generous with lime zest and juice
